Vegan Banana Bread Muffins (sugar-free and gluten-free option): Incredibly Fluffy Muffins with Chocolate and Banana

These muffins are (almost) sugar-free and super suitable for afternoon snack or a quick breakfast. For guests and as a nice decoration is well suited plain chocolate coating. If you then sprinkle them with walnuts, they are also a real eye-catcher on the coffee table.

The ingredients or alternatives for vegan banana bread

Either you prepare this vegan banana bread classically in a loaf pan or you use muffin tins, as in this recipe. It tastes great both ways!

  • Sweetener: If you like the muffins a little sweeter, you can add some additional sugar.
  • Neutral vegetable oil: I like to use sunflower oil for baking. It makes the batter nice and moist. But it also works with other oils.
  • Flour: You can use regular flour (type 405) or gluten-free flour.
  • Nuts: You can add whole or chopped nuts to the dough as needed. This gives a delicious crunch.
  • For the topping: You can add some melted chocolate on top of the muffins. This not only looks great, but tastes delicious in combination with the nuts!

ingredients

  • 200 g flour (or gluten-free alternative)

  • 2 level teaspoons baking powder

  • 1 tsp vanilla paste

  • 1 pinch of salt

  • 100 g maple syrup

  • 2 bananas (ripe)

  • 50 g sunflower oil

  • 2 tbsp. soy flour

  • 4 tbsp water

instructions

  • Preheat oven to 180 degrees
  • Grease the muffin pan or provide paper cups
  • Mix the soy flour with the water
  • In another bowl, mix bananas, vanilla paste, salt, maple syrup and oil
  • Mix flour with baking powder
  • Add flour mixture to banana mixture and mix until a homogeneous dough is formed
  • Pour batter into muffin cups (recipe makes 6 large or 9 small muffins)
  • Bake for 20min on middle rack
  • Let muffins rest in pan for 20min and then place on a cooling rack to cool

Tipps

  • Muffins keep their shape best when you bake them in a muffin tray. Also, if you decide to use paper molds, it’s best to put them in the muffin tray.
  • Doughs with baking powder should be baked immediately after preparation. Otherwise, the baking powder loses its leavening power.
