I love quesadillas since my vacation in the USA. There, many Mexican fast food restaurants served the filled tortilla wraps. This recipe for vegan quesadillas is based on the fast food version, but is much healthier. The quesadillas are super quick and easy to prepare. They are perfect for a quick vegan lunch or dinner. Also great for healthy vegan meal prep!

The quesadillas are super healthy and just taste everyone! This vegan recipe is in addition still without milk, without eggs, without butter and Co! Therefore: Purely vegetable and super delicious!

Easy and quick: Vegan Quesadillas with Spinach and Red Lentils

The vegan quesadilla recipe is super simple. The only thing you need is a pan and a small bowl!

With a little fresh cilantro quesadilla become a real eye-catcher. Of course, the filled tortilla also taste without cilantro. The Quesadilla are incredibly healthy! Because it comes with purely vegetable ingredients. In addition, it is a low fat recipe that provides you with plenty of nutrients.

Savory Vegan Quesadillas: So delicious

The recipe for my vegan quesadillas is super easy.

  1. Heat some oil in a pan and put a tortilla in it.
  2. Fill the tortilla with spinach and cooked lentils.
  3. Season the filling according to your taste.
  4. Put another tortilla on top of the filling and fry the tortilla for 2-3 minutes.
  5. Turn the quesadilla over and fry it again for a few minutes.
  6. Put the ingredients for the hummus in a food processor and process until smooth.
  7. Enjoy the hot quesadillas with the delicious quesadillas.

This best Vegan Quesadillas Recipe is an easy, healthy, and low-fat dish that’s made in a pan! Using only plant-based ingredients, this vegan dish is packed full of flavor and protein.

Zutaten

  • For the quesadillas
  • 4 tortilla wraps

  • 200 g red lentils

  • 150 g frozen spinach

  • 1 pinch of salt

  • A pinch of pepper

  • 1 pinch of chili

  • Fresh coriander (optional, for decoration)

  • For the hummus
  • 1 small can of cooked chickpeas (approx. 265g drained weight)

  • juice of half a lemon

  • 1/2 tsp salt

  • 1 small clove of garlic

  • 50 ml water

  • 1/2 tsp cumin (optional)

  • A few whole chickpeas (optional, for decoration)

  • Quesadillas
  • Cook lentils according to package directions
  • Cook spinach in boiling water for 8-10 minutes
  • Mix the lentils, spinach and spices together
  • Heat some oil in a pan
  • Repeat the following steps for the other portion(s): Place a tortilla wrap in the pan and spread with half of the spinach and lentil mixture (it is best to leave a space of about 1 cm to the edge of the wrap to help it stick together).
  • Cover the coated tortilla wrap with another tortilla wrap and heat for about 3 minutes.
  • Then flip the two wraps in the pan and heat for another 3min
  • Transfer to a large plate and cut into quarters
  • Sprinkle with fresh cilantro and serve with hummus
  • Hummus
  • Drain chickpeas in a colander and rinse with cold water
  • Put the drained chickpeas in a blender together with the other ingredients and puree finely
  • If the hummus is not creamy enough, simply add a little water
