Healthy Mexican Fast Food: Simple Vegan Burrito Bowl

The vegan bowl comes completely without animal products and is just incredibly delicious. The recipe is super quick and easy to prepare. The bowl can be modified depending on the available vegetables and is super suitable as a meal from the pantry.  I topped off the bowl with a slightly spicy sauce. For this I simply mixed some Sriracha with water and oil and spices.

Quick burrito bowl recipe with pure vegetable ingredients

You can easily make the tortilla chips at home:

  • Cut tortillas into triangles, brush with a little oil and spices.
  • Put in the oven for about 5-7 minutes at 180 degrees.
  • Here you go! Enjoy.

These homemade nachos go perfectly with the chili sauce and give a nice crunch. Feel free to add your own choice of spices to the nachos.

Ingredients and Alternatives for this Recipe

This vegan burrito bowl is full of healthy foods. For example, the quinoa and kidney beans provide you with the necessary portion of protein. I discovered jackfruit as a topping – the fruit is full of calcium and B vitamins.

Zutaten

  • For the bowl
  • 80 g quinoa

  • 100 g jackfruit

  • 25 g corn

  • 25 g kidney beans

  • 1/2 avocado

  • 50 g cherry tomatoes

  • 1 lime

  • For the sauce
  • 1 tablespoon creme fraiche (vegan)

  • 1 tsp Sriracha

  • some water and/or oil

zubereitung

  • Prepare quinoa according to package directions
  • Season jackfruit, mix with oil and refrigerate for a quarter hour
  • Meanwhile, prepare toppings and drain corn
  • Drain kidney beans and rinse with cold water
  • Wash and chop vegetables
  • Sauté jackfruit for about 5-7min
  • Put all ingredients in a bowl
  • Mix the vegan creme fraiche, some sriracha and a little water and/or oil to thin it in a bowl and pour it over the bowl.
  • Serve with nachos and lime slices

Tipps

  • Die Bowl ist gut vorzubereiten und ist auch kalt ein Genuss.
  • Falls Du keinen Quinoa zuhause hast, kannst Du die Bowl natürlich auch klassisch mit Reis machen.
