These vegan pide are made from purely vegetable ingredients. The recipe comes with few ingredients and is quick and easy to prepare. The savory yeast patties are super tasty and just totally fluffy. Since classic pide from the fast food can not keep up. Because this vegan recipe is still without milk, without eggs, without butter and Co. Thus, this recipe is purely vegetable and super delicious!

Simple and quick: vegan pide with spinach, tofu mince or tofu sausages

The vegan pide recipe is super easy.

  1. First, prepare the yeast dough.
  2. After the dough has risen, it is quartered and each part is rolled out oval.
  3. Then the dough boats are topped.
  4. Then the edges of the pide are folded in and the ends are rolled up.
  5. Now place the pide on a baking sheet in the oven.
  6. The yeast buns are now baked for 25-30min.
  7. Finally, enjoy directly warm, but they also taste cold!

The fresh spices make every vegan pide a real eye-catcher. The dough boats are super fluffy – no one will notice that the yeast recipe is vegan.

Zutaten

  • For the dough
  • 100 g margarine (soft, room temperature)

  • 300 g vegetable milk or water

  • 600 g flour (type 405)

  • 1 cube fresh yeast or 2 packets dry yeast

  • 2 tsp salt

  • 2 tsp agave syrup

  • For the spinach filling
  • 250 g leaf spinach (frozen)

  • 1 clove of garlic (or more to taste)

  • spices to taste (e.g. salt, pepper, chili)

  • For the tofu “mince” filling
  • 200 g tofu

  • 1 can of chunky tomatoes

  • 1 tablespoon tomato paste

  • spices to taste (e.g. salt, pepper, chili)

  • Warm the vegetable milk or water a little so that the liquid is slightly warmer than room temperature.
  • Add soft margarine to the vegetable milk or water and mix for about 3min
  • Add remaining ingredients and knead for another 5min
  • Put the dough in a bowl and let it rise for 1 hour in a warm place.
  • Meanwhile you can prepare the fillings
  • Chop the tofu with a fork to make tofu “mince”.
  • fry the tofu mince in a pan with oil and add spices and tomato paste
  • Defrost spinach in a pot of boiling water and let cool slightly
  • Cut tofu sausages into 1-2cm thick slices and fry in a pan with oil until crispy
  • Cut garlic cloves and set aside
  • At the end of the baking time preheat the oven to 200 degrees top and bottom heat
  • Divide the dough into 4 parts and roll out into an oval shape on a floured work surface with a rolling pin
  • Then fill the dough with the different fillings as you like and add garlic and spices over the dough boats as needed (Important: Leave a margin here so that you can carry out the following step)
  • Fold in the sides of the dough boats and turn the ends in a bit
  • Place the filled pide on a baking tray and put them in the oven for 25-30 min.
